Hearty Cowboy Soup
In autumn, when the winds begin to change and the Texas Norther’s start rolling in, people like to gather around the fire and warm up with a big bowl of comfort. It’s quick and easy to make:
1 - Texas Sweet 1015 onion (two yellow onions will work too) coarsely chopped
2 -Tablespoons butter
2 - potatoes peeled and diced
2 - 15-oz cans black beans
1 - 14-oz can (2 Cups) chicken broth
1 - Pound of your favorite smoked sausage sliced.
1 – Cup KA-Ranch Wrangler Salsa (or Vaquero Salsa for hot).
Melt the butter in a large pot and sauté the onion until tender.
Add the potatoes, beans, and broth. Bring to a boil and then simmer for about 10 minutes.
Add the sausage and salsa and cook for another 10 minutes.
Serve with hot cornbread and butter.
